A few weeks ago, I purchased a package of hake fillets from Costco. Normally when I make fish fillets, I either broil or saute my fillets. But this time, I decided to do something different. I decided to make fish cakes.
These hake fillets are so fragile, and easily break apart when handled. As a result, they are perfect to use for making fish cakes.
These fish cakes are super easy to make, and very delicious. I hope you like it.
Here is how you make them:
In a bowl add 4 raw hake fillets, 2 organic eggs, 1/4 cup paleo mayonnaise, 2Tbsp finely chopped red onions, 1Tbsp finely chopped fresh cilantro, dried dill (to taste), 2 tsp Old Bay seasoning, salt/pepper (to taste), 1Tbsp freshly squeezed lemon juice, and 2Tbsp coconut flour. Using your hands, mix well until hake fillets are broken up and all ingredients are thoroughly incorporated. When done, form mix into patties.
Add coconut oil to saute pan and place on medium heat. Once oil is hot, add patties and pan fry on both sides until brown.
When patties are done, remove from pan and place on a plate until ready to use.
In the same pan, add a bit more oil, and add thinly sliced organic kale. Season with salt and hot red pepper flakes. Saute kales for about 2-3 minutes, then remove from pan.
Add kale onto a plate, and then top with fish cake.
