Last week, I wanted to make a sweet and savory paleo meal. I had just purchased some fresh organic kale and sweet potatoes, and decided to incorporate the two vegetables together.
I thought about keeping the dish vegan, but then decided to add some lean organic ground beef for some extra protein.
The sweetness from the roasted sweet potatoes, paired with the savory flavors from the sauteed kale and ground beef, was the perfect combination.
And since it was so delicious, I decided to pack it for lunch the next day in my Easylunchbox.

Paleo Spicy Kale & Ground Beef
Ingredients
1/2-1 Tbsp organic coconut oil
1 lb organic lean ground beef (can use chicken, turkey, lamb, or tofu)
@3-4 cups of fresh organic kale leaves thinly sliced
dried crushed red pepper flakes (to taste)
salt/pepper
Directions
In a large saute pan melt oil. Once oil is melted add ground beef. Saute until beef is almost done cooking. Next add pepper flakes and kale to pan. Saute until kale starts to wilt. Turn off heat and season with salt/ground pepper. Serve with roasted sweet potatoes.
Maple Syrup Roasted Sweet Potatoes
Ingredients
1 large sweet potato (peeled & cut into 1 in cubes)
olive oil
honey
maple syrup
ground cinnamon
salt/pepper
Directions
In a large bowl add sweet potatoes, and drizzle with some olive oil (enough to coat potatoes). Next add desired amount of honey, maple syrup, cinnamon, and salt/pepper. Toss to make sure potatoes are completely coated. Pour onto a lined baking dish, and spread out so that potatoes are in a single layer. Place pan into a preheated 375 degree oven, and bake until potatoes are fork tender (about 30-40min). Once done, remove from oven and allow to cool slightly. Serve with sauteed kale and ground beef.
